Orange chocolate muffin

Ingredients

  • 1 cup of Juana corn meal 
  • 1 cup of All Purpose Flour  
  • ½ cup of sugar  
  • 1 tablespoon of baking powder  
  • 1 teaspoon of salt  
  • ¼ cup of canola or vegetable oil  
  • 1/3 cup of milk  
  • 2 eggs  
  • 1 bag of chocolate chips  
  • 1/3 cup of orange juice  
  • The zest of 1 orange  
  • 1 teaspoon of vanilla extract 

Preparation

  1. Preheat oven to 400°F.  
  2. Line muffin tins with paper cupcake liners. 
  3. In a large mixing bowl, whisk together the Juana corn meal, flour, sugar, baking powder, and salt until thoroughly combined.  
  4. In a medium mixing bowl, whisk together the oil, milk, orange juice, and eggs until thoroughly combined.  
  5. Pour the wet ingredients into the dry ingredients, then stir together with a spatula using swift, short strokes, until just combined. Do not over mix.  
  6. Gently fold the chocolate chips into the batter.  
  7. Scoop batter into prepared muffin tin. Fill the cavities almost to the top.   
  8. Bake at 400°F for 16-18 minutes, or until a toothpick inserted into the center of the muffins comes out clean.  
  9. Remove muffins from the oven and let them cool 10 minutes in the pan, then turn them out onto a work surface.
