Pork Crackling Hallacas

Ingredients

  • 2 cups of Juana corn meal 
  • 1 cup of water 
  • 3 tablespoons of lard 
  • 1 cup of ground pork cracklings 
  • 2 teaspoons of salt 
  • corn husks for tamales 
  • 10 cups of water for cooking 

Preparation

  1. Soak the corn husks in hot water for 1 hour to soften and avoid breaking. 
  2. In a bowl, knead the flour with water, lard, pork cracklings, and salt until obtaining a homogeneous dough that easily comes off the edges. 
  3. Take a portion of the dough, about the size of your fist, and shape it into a cylinder with your hands. 
  4. Wrap it with one or two corn husks, making sure it is well covered.  
  5. Take a few husk strips or cooking twine, fold the narrower end of the corn husks and tie in the middle to close the hallacas. 
  6. In a pot, heat the water at high heat. When the water boils, insert the hallacas and cook for 40 minutes. 
  7. Remove from the pot and drain for a few minutes. 
  8. Serve them hot, with or without husks.
